Pumpkin, turkey and cheese quesadillas

STEP BY STEP

You can either use ready-peeled pumpkin chunks or buy a fresh pumpkin, slice off the top and scoop out the inside with a spoon, although you might have trouble keeping your little helpers on board if it takes too long.


Once you’ve got your pumpkin flesh, gently fry it in extra-virgin olive oil while the kids are chopping up the sliced cheese and turkey into little bits using suitable utensils for their age: a blunt knife, scissors or their (spotlessly clean) hands.


Transfer the fried pumpkin to a plate and put the cheese, turkey and flour tortillas on three more. Put one child in charge of each ingredient. You’ll be in charge of the frying pan. By giving them some responsibility, you’re making sure the kids’ attention doesn’t wander and they won’t start causing trouble in the kitchen.


If there are enough children, put the eldest one in charge of making the dip for the quesadillas, by emptying the yogurts into a bowl, plus some pepper, the juice from half a hand-squeezed lemon and some finely chopped mint (you could do the chopping-up yourself beforehand).


Warm some extra-virgin olive oil in the frying pan and ask one of your little helpers for a tortilla. Next, add some turkey to the middle, then some cheese and pumpkin. When the cheese has melted, fold the tortilla in two. Give it a toss and onto the next one!


Cut them into triangles before serving so that the kids can dip them in the yogurt sauce and eat them easily with their hands.
